Feels a wee bit dated though it's only from '03. Good upfront info. regarding calcium nutrition and cheese vs. non-cheese benefits. It's an easy read with varied recipes from sauces to desserts to main meals, pastas and fondues plus standards like mac 'n cheese. There's even a bleu cheese dressing recipe (oooo, I miss that on salad!!) Upfront info. also reminds us that we can get all calcium needs from PLANT SOURCES...not slayed innocent animal friends. There are minimal photos...of course we all love pics...but I don't fault the book for that. Overall it's cleanly-laid out with little notes on each recipe and serves as a great staple in the dairy-free, animal-friendly household! Consider it a must-have!

Having embraced a vegan lifestyle, one of the things I miss most is cheese. The Ultimate Uncheese Cookbook fills this gap admirably. I recently made the 3 cheese Lasagne and it was a big hit with my family. The recipes are easy to follow with clear ingredient lists and instructions. You may have to add a few things to your pantry, but these are easily obtainable items. I highly recommend this cookbook to all those who either can't eat dairy or who choose not to. It's excellent.
When you're a Vegan, cheese is a no-no; REAL cheese that is. But this book gives hope for Vegan's. The recipes I've tried so far were easy to make AND they tasted good as well. Plus I took them to a church fellowship lunch and they were both well accepted. The only problem with this book is some of the ingredients are non-existent in the small town I live in...so until I have other things that are needed for a trip into the city, I just have to do without. But overall, I like this book and I am glad I found its title on another site.
A very good book. I love the variety of ingredients it varies from nut base to tofu, to white beans. Very tasty, and easy to make.
